Salmon Lasagne. Oh Yes.

Lasagne with fish may not sound like a very good idea but trust me – it is. This dish does require a bit of work but it feeds and impresses a larger crowd. And that is satisfactory. Especially if you’ve got a feeding fetish like myself.

You need.
Lasagne sheets
Salmon fillets (approx. 250-300g) can be smoked. It’s up to you. I would chose lightly smoked. Just saying.
2 large onions, chopped into reasonably small pieces
some garlic cloves
one flowerhead of broccoli
approx. 80g of butter
approx. 800ml of milk (sorry I don’t do pints or any of those other crazy volumes)
3 heaped tablespoons of flower
grated cheese, e.g. cheddar
porcelain or glass lasagne dish (Sainsburys sell a nice white one for 10£ or so)

Do this.
Pre-heat the oven to 200°C. Boil the broccoli until it is sort of cooked but not too soft. This should take around 10min. At the same time, fry the onions until softened, then add the salmon and cook until the salmon is no longer raw. Divide the fish into small bits. Season with salt and pepper. Drain the broccoli and set aside. Use a fork to mash it up a bit. Use the same pan to melt the butter at high heat. Add the flour and roast for a minute or so, be careful not to burn it. Then turn down the heat and add a quarter of the milk. Whisk until well combined. When it gets too thick, add more milk. Repeat until you’ve used all the milk and have got a nice thick Béchamel sauce. Season with salt and pepper. Nutmeg is optional.
Pre-assembly
Now it’s time to assemble your masterpiece. (I strongly recommend the movie “The Avengers Assemble”). Start with pouring some sauce on the bottom of the dish, add some of the salmon/onion mix and some squished broccoli. Cover with lasagne sheets. Repeat until all the ingredients are used up. I usually make four layers of salmon. Don’t forget to leave a good amount of sauce to pour over the top. Sprinkle it with plenty of cheese for a beautiful crust. Bake your baby in the oven for around 35-45min, it depends on your oven, just make sure the lasagne sheets are soft and the top is not black.

Ps. If you’re feeling fancy you can add some ricotta to the layers.


Pps. You can substitute the fish for chicken if you don’t like salmon. But. WHAT is wrong with you?
